Laura Naumes' Banana Bread

Have a healthy treat using fresh pears as an ingredient. Laura substitutes pear puree and agave syrup for sugar in her favorite banana bread recipe.


  • ¾ C. Whole Wheat Flour
  • ¾ C. All-purpose flour
  • ¼ C. Flaxseed meal
  • 1 tsp. Baking Powder
  • ½ tsp. Baking Soda
  • ½ tsp. Salt
  • 1 ½ C. Ripe Banana, mashed
  • ½ C. Pear Puree
  • ½ C. Plain Non-Fat Yogurt
  • 2 Tbl. Lighter Bake ( Found in baking section at store)
  • 2 Tbl. Agave Syrup ( I like Blue Agave)
  • ½ C. Walnuts (Optional) chopped
  • How to prepare

    Preheat oven to 325. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 4 ingredients (through salt) in a large bowl, stirring with a wisk. Combine banana and next 5 ingredients in a large bowl or mixer and mix. Add dry ingredients to banana mixture, strirring just until moist, do not over mix. Spoon batter into a 9X5 inch loaf pan coated with cooking spray. Bake at 325 for approx. 60 minutes, it is possible that you may need to bake up to an hour 10 min. Oven cooking times vary, I like to check the bread after 50 min by inserting a wooden toothpick in the middle of the loaf, If the toothpick comes out clean the bread is done. Cool for 10 minutes in a pan on a wire rack, remove from pan and continue to cool on wire rack.

    I found it is important not to over bake the bread. This recipe is easily doubled. I always triple it when sending care packages to my triplets in college.
